This festive season, if you are looking for something unique to enjoy with friends and family, Chef Manish Mehrotra shares just the recipe you need. These Sweet Almond Baos are so delicious, you will want to make them again and again!

Sweet Almond Baos
Prep time: 2 hours (includes dough resting time)
Coking time: 30 minutes
Makes: 10 baos

For The Dough
550 g maida
1½ tsp caster sugar
1 tsp activated dried yeast
50 ml milk
1 tbsp sunflower oil
1 tbsp rice vinegar
1 tsp baking powder
225 ml water

For The Jackfruit Stuffing
1 cup steamed and pulled jackfruit
2 tbsp chopped almonds
½ cup onion tomato masala
1 tsp tamarind chutney
1 tsp soy sauce
1 tsp chopped coriander leaves
1 tsp lemon juice

For The Jackfruit Stuffing
1. In a pan, heat the onion tomato masala, add the steamed and pulled jackfruit and mix.
2. Add some water, stir in tamarind chutney and cook for 30 seconds.
3. Finish it with soy sauce, coriander leaves and lemon juice. Sprinkle the almonds and stir well. Allow it to cool.
4. Divide the mix in 10 parts.

For Sweet Almond Bao
1. Add the sugar, salt and yeast to a bowl and mix. Add 50 millilitres warm water and stir. Leave it to activate for 10 minutes.
2. Add the flour, milk and to the yeast mix and bind a smooth dough by adding the remaining water little at a time.
3. Knead the dough for 10 minutes. Then cover and leave it for an hour or until doubled in size. Knead again and divide it into 10 balls.
4. Fill each dough balls with portion of the jackfruit stuffing by making a depression in the centre. Seal the base and reshape into a bao.
5. Apply little oil over the stuffed baos.
6. Place on a tray to rest for 35-40 minutes and allow to rise.
7. Steam the baos for eight to 10 minutes in a steamer until puffed.
8. Wait no more, enjoy!
