
Potato milk is not widely available in India, but you can make your own to try it
The humble potato, so versatile in the Indian kitchen, now has one more avatar. It has joined the ranks of the plant-based milks so popular with vegans and the health conscious who want to reduce their dairy consumption. The new ‘milk’ is carby, buttery and creamy – a little like oat milk. It is said to reduce cholesterol, is slightly lower in calories than dairy milk, and cheaper to make than nut milk.
Potato milk is not widely available in India, but you can make your own to try it. Simply blend a well-boiled potato with water and salt (and sweetener if you like). Adding a few soaked almonds enhances the taste. Strain through cheesecloth and use in cold applications like in shakes and over cereal.
