Christmas Fruit Cake with Nestle MILKMAID

You will never opt for store-bought Christmas cake again with this easy-to-follow recipe. The aroma of warm spices filling the wintry air is just too irresistible. Even if you are not big on Christmas, this rich fruit cake will change your mind for sure.

Prep time: 40 minutes 

Baking time: 60 minutes
Serves: 10 

½ cup (75 g) sugar

1/3 cup (50 ml) warm water 

2 cups (200 g) maida (all purpose flour) + 1 tbsp for sprinkling

1 tsp baking powder

1 tsp baking soda

1/2 tsp dalchini (cinnamon) powder

½ tsp jaiphal (nutmeg) powder

1½ cups (150 g) chopped dry fruits
100 g butter, at room temperature 

1 tin (400 g) Nestlé MILKMAID

150 ml aerated soda



  1. Preheat the oven to 180° C. Grease an 8” round cake tin, and dust with maida. 
  2. Heat the sugar in a pan until it melts and becomes brown. Add the warm water to make caramel syrup and set aside.
  3. Sieve together the maida, baking powder, baking soda, cinnamon, and nutmeg two to three times. Sprinkle 1 tbsp maida on the chopped dried fruits to coat them.
  4. Mix the softened butter and Nestlé MILKMAID in a bowl. Fold in the dry sieved ingredients, alternating with the aerated soda and the prepared caramel syrup until all are used. Add the chopped dry fruits, and fold them into the batter carefully.
  5. Pour the batter into the greased cake tin, and bake in the preheated oven for about 45 minutes or until the cake is done. Remove from the oven, and allow to cool for a while in the tin. Loosen the sides of the cake, and transfer onto a plate. Cool slightly before cutting into pieces.

Rich Milk Cake with Nestlé MILKMAID 

Believed to have originated in Mexico, Milk Cake (Tres Leches) is an absolute favourite cake with milk lovers. “Tres leches” means three types of milk. In this recipe, we use milk in three different forms: whole milk, evaporated milk, and condensed milk. 

Prep time: 30 minutes
Baking time: 20 minutes

Serves: Six to Eight 


For the sponge:

½ cup Nestlé MILKMAID

3 tbsp Nestlé a+ Nourish Dahi

¼ cup oil

½ tsp vanilla essence  

1 cup flour

1 tbsp cornflour

½ tsp baking powder

½ tsp baking soda

Salt, to taste

½ cup Nestlé a+ Nourish Milk

For the tres leches mixture:

1 cup Nestlé a+ Nourish Milk

½ cup Nestlé MILKMAID

3 tbsp fresh cream

½ tsp vanilla essence

For the frosting:

1 cup Nestlé a+ Nourish Dahi

3 tbsp Nestlé MILKMAID

¼ tsp vanilla essence


  1. Preheat the oven to 180° C. Line an 8x8 inch square tin with parchment paper or butter paper, or grease it evenly with butter.
  2. To prepare the sponge, place the Nestlé MILKMAID, dahi, oil, and vanilla essence in a large mixing bowl. Whisk well until a uniform consistency is achieved. Sieve the flour, cornflour, baking powder, baking soda, and salt directly into the bowl of wet ingredients. Mix together the dry and wet ingredients. Slowly add the milk, little by little, to get a pouring consistency. Pour the batter into the prepared tin, and tap it on the counter to remove air bubbles. Bake for 20 minutes or until the cake passes the toothpick test. Remove from the oven, let it rest in the tin for 10 minutes, then unmould onto a plate or tray. Allow to cool for another five minutes, then slowly remove the butter paper (if used), and set aside.
  3. To prepare the tres leches mixture, pour the milk into a heavy-based saucepan. Keep stirring until it comes to a boil. Allow the milk to simmer on a low flame, stirring continuously to avoid burning. Once the milk reduces to half of the initial quantity, the evaporated milk is ready. Add to a bowl with the Nestlé MILKMAID and cream. Add the vanilla essence and whisk well.
  4. Using a fork or toothpick, prick the cake. Pour the prepared tres leches mixture all over the cake, then refrigerate it for 30 minutes.
  5. To prepare the frosting, pour the dahi into a muslin cloth and hang it for an hour to get hung curd. Whip the hung curd with Nestlé MILKMAID and the vanilla essence. 
  6. Remove the cake from the refrigerator, and spread this frosting evenly on the cake
  7. Garnish with seasonal fruit on top. Refrigerate and serve chilled.

Chocolate Towers with Nestlé MILKMAID

Delicious layers of Nestlé MILKMAID and chocolate sauce along with crunchy biscuits! This lip-smacking chocolate biscuit pudding is loved by both adults and kids, and is so easy to put together that you might end up building indulgent skyscrapers!

Prep time: 20 minutes
Chilling time: 120 minutes

Serves: Eight 


1 cup water

1 tsp instant coffee powder

40 biscuits

¼ tin (100 g) Nestlé MILKMAID

8 to 10 walnuts, roughly chopped 

For the chocolate butter sauce:

¼ tin (100 g) Nestlé MILKMAID

50 g butter

3 tbsp cocoa powder

1 tbsp instant coffee powder


  1. Keep eight small bowls ready for the chocolate towers. 
  2. To prepare the chocolate butter sauce, combine Nestlé MILKMAID, butter, coffee powder, and cocoa powder. Set aside.
  3. Boil the water and coffee powder to prepare coffee liquor.
  4. Dip the biscuits in the coffee liquor, and place in the bowls. Layer biscuits alternately with chocolate butter sauce and Nestle MILKMAID. Make five layers in each bowl, ending with a layer of chocolate butter sauce.
  5. Decorate with walnuts and serve chilled!
