Ingredients
10 cups water (divided usage)
6 black tea bags
1 pinch baking soda
½ to ¾ cup simple syrup
Ice cubes
Lemon slices, to serve
Method
1. Bring three cups of water to a boil. Remove the pan from the flame.
2. Add the tea bags and the baking soda. Steep for five to six minutes. Remove the tea bags without squeezing. Add the simple syrup and stir.
3. Pour into a pitcher and add the remaining water.
4. Serve over ice cubes, garnished with the lemon slices.
Ginger Beer
The United Kingdom

Ingredients
200 g ginger, thickly sliced
Peel and juice of 2 large lemons
75 g caster sugar
100 g brown sugar
500 ml water
Ice cubes
1 litre soda
Mint sprigs, to serve
Method
1. Place the ginger, lime peels, caster sugar, brown sugar and water in a saucepan and stir over a low flame until the sugars have dissolved. Raise the flame to medium, and simmer for 15 to 20 minutes until the mixture is reduced and syrup-like. Remove from the flame and allow to cool completely.
2. Strain the syrup through a sieve lined with muslin into a large jug.
3. Add the lemon juice and ice cubes, stir and top up with soda.
4. Serve garnished with mint sprigs.
Tip: The ginger syrup will keep in a sterilised jar for two weeks in the fridge.
Horchata
Mexico

Ingredients
1 cup long-grained white rice, rinsed
1 cinnamon stick, broken into pieces
8 cups drinking water
½ cup sugar, or to taste
1 tbsp ground cinnamon + extra to garnish
¾ tbsp vanilla extract
Method
1. Blend the rice and cinnamon sticks with four cups of the water in a blender for about one minute. Remove to a large bowl and add the remaining four cups of water.
2. Set aside to soak at room temperature for three hours.
3. Pass through a sieve to obtain the rice water.
4. Stir in the sugar, ground cinnamon and vanilla extract. Chill.
5. Stir well and serve cold, garnished with ground cinnamon.
Tip: You can also add rum, lime zest and ground (soaked) almonds for added flavour.
